Its Canada’s 150th birthday and with so many wonderful things to celebrate about our home and native land, these tasty popsicles will be a perfect birthday gift for all of your Canadian friends! At Steed & Co, we love Canada. From Southwestern, Ontario, our personal favourite Canadian landmark are the Great Lakes, especially cute and local Port Stanley on Lake Erie …although maple syrup is pretty awesome too! We believe it’s important to recognize what matters to us most as Canadians, and hope that we are all able to spend sometime recognizing the greatness of our country today.

We are celebrating with some delicious vegan lavender Canada Day-themed popsicles that are perfect for any Canada Day BBQ. These pops are made with Steed & Co. culinary lavender, fresh Ontario strawberries, and sweetened to blissful perfection with our very own lavender syrup. They’re absolutley delicious and bound to get lots of compliments. Leave ’em plain or dip ’em in smooth and rich dark chocolate and jazz them up with all sorts of fun toppings. These pops are so beautiful, they could pass as a festive centrepiece.

Ingredients:
• 1 can of fullfat coconut milk
• 1 cup of fresh Ontario strawberries
• 1 tbsp. of Steed & Co. Culinary Lavender
• 6 tbsp. of Steed & Co. Lavender Suryp

• 1/2 tbsp. of vanilla extract
• 1 cup of semisweet dark chocolate (opt.)
• 3 tbsp. coconut oil (opt.)
• Goji berries, coconut flakes (opt.)

Instructions:
1. Puree 3/4 c. of strawberries in a blender or food processor. Add 2 tbsp. of lavender syrup and blend until combined.

2. Chop the remaining 1/4 c. of strawberries into small pieces and stir into the puree. Set aside.

3. In a seperate bowl, mix coconut milk, vanilla extract, 2 tbsp. of lavender syrup, and the culinary lavender together. Mix untill thoroughly combined.

4. Carefully transfer 1-2 tbsp. of the strawberry mixture into each popsicle mould. Carefully add 1-2 tbsp. of the coconut mixture into each mould. Alternate between the strawberry and coconut mixtures until the moulds are just about filled all the way to the top. Place moulds in the freezer.

5. Allow popsicles to freeze completely (about 6 hrs). Once the popsicles are frozen, run the bottom of the mould under warm water. The popsicles should easily slide out of their moulds. Serve and enjoy! …or coat with chocolate and other fun toppings!

OPTIONAL:
These next few steps are optional (but highly recommended!)

6. After the popsicles have been removed from the moulds, lay them on a cookie sheet with parchment paper and place them back into the freezer to harden some more.

7. In a double-boiler, add dark chocolate and coconut oil and heat until just melted. Stir generously. You may also use a microwave for this step – just be careful not to burn the chocolate!

8. Transfer melted chocolate into a tall glass. Dip the popsicles (about a third of the way, or to your desire) into the chocolate to coating. Place the popsicles back on the cookie sheet and let the chocolate harden.

9. Or… before the chocolate hardens, adorn popsicles with toppings of your choosing. We used lavender buds (obviously) and some extra festive coconut flakes and goji berries. Have fun with it and enjoy!!
